This easy-to-prep salmon recipe is perfect for a quick weekend meal. Everything comes together in simple foil packets, locking in fresh, Mediterranean-inspired flavors with almost no cleanup!

Ingredients

  • 10 oz cherry tomatoes, quartered

  • 4 tbsp extra-virgin olive oil

  • 1 small shallot, finely minced

  • 2 tbsp black olive tapenade (or chopped black olives)

  • ½ tsp salt

  • 8 fresh basil leaves

  • 4 small sprigs fresh thyme

  • Freshly ground black pepper, to taste

  • 4 large sheets aluminum foil (12×18-inch)

  • 4 salmon fillets (about 7 oz each), skin-on


Instructions

1. Grill Prep: Preheat your grill to high heat and lightly oil the grates.

2. Make the Mixture: In a bowl, combine the cherry tomatoes, olive oil, shallot, tapenade, salt, basil, thyme, and black pepper.

3. Assemble: Lay out the foil sheets and place each salmon fillet in the center, skin-side down. Spoon the tomato mixture evenly over the top, then fold and seal the foil into packets.

4. Grill: Reduce the heat, place the packets on the grates, and cook covered for 7–8 minutes, until the salmon flakes easily with a fork.

5. Finish: Let the packets rest for a few minutes before carefully opening and serving.


Tips

Camping Tip: You can prepare the foil packets a few hours ahead—just keep them refrigerated until grilling.

Extra Tip: No grill? No problem. Bake the foil packets at 425°F (220°C) until the salmon is cooked through and flakes easily.
