Campfire Loaded Baked Potatoes

Why is it that everything cooked on a campfire tastes, just that much better? Perhaps it’s the outdoors, the fresh air, you’re relaxed, stress free state or maybe it’s because you’ve had a few wobbly pops! Either way if you’ve never tried a loaded baked potato, do yourself a favour and try the campfire version first! There is something really extra special about this recipe. It is one of the few times when potatoes can serve as both a side and a main course. Be sure to bring along lot’s of sour cream, you’ll need it!

Large unpeeled potatoes - 4
Butter - 4 tbsp
Salt - 2 tsp
Pepper - ¼ tsp
Green onion, chopped - 8 tbsp
Grated Cheddar Cheese - 1 cup
Sour Cream - 1 cup
 
Wash and cut the potatoes into 1 inch (2.5cm) pieces. Spray 4 large sheets of foil (about  12 inches, 30cm long) with cooking spray. Divide potatoes and butter into four and place 1 portion in centre of each foil sheet.  Season with salt and pepper. Wrap foil around potatoes and close each packet tightly. Cook on grill on your campfire until potatoes are tender, approximately 25 minutes, turning packets occasionally to avoid burning.
Remove potatoes from packets, top with onions, cheddar cheese and sour cream. Makes 4 servings.
Trust me; it will be the best baked potato you’ve ever tasted!

Here's a tip if you have any left over cooked bacon (okay, I know, whoever has left over bacon! ha!) add a little bacon on top, it's mmm mmm good!
